Join us for an unforgettable culinary experience as part of Deer Valley's Taste of Luxury Series, featuring Michelin-starred Chef Davide Palluda. Events include a VIP meet-and-great reception, followed by a five-course Italian dinner on March 14 and 15, and a hands-on cooking class at The Brass Tag on March 16.
The five-course dinners, meticulously crafted by Chef Palluda, promise a journey through his coveted cuisine. Each evening begins with an optional VIP reception featuring passed canapés, hand-selected wines, and a meet-and-greet with the chef.
The cooking class offers an exclusive opportunity to learn from Chef Palluda as he guides you in crafting pasta from scratch. Held at The Brass Tag, the class concludes with a wine-paired feast of your creation. Guests will also receive a pasta maker, custom apron, and recipes for all the dishes prepared to mark this extraordinary experience.
Guests are also invited to indulge in the La Colombe Coffee Lounge, open from 5-10 p.m. on March 14 and 8 a.m. - 3 p.m. on March 15 - 16. Nestled within the cozy confines of the Fireplace Foyer, adjacent to The Brass Tag, this complimentary experience offers an exquisite selection of handcrafted coffees, giveaways, and specialty drinks prepared by La Colombe's skilled baristas from their charming custom-draft tricycle. rich-text, responsive-table
About Chef Davide Palluda
Chef Davide Palluda was born in 1971 in Canale, where he continues to live and work. After completing professional studies at the Barolo Hotel School, he gained formative experience in some of the most prestigious kitchens across Italy and Europe. In 1995, alongside his sister Ivana, he opened the restaurant All’Enoteca, which is attached to the Regional Wine Cellar of Roero in Canale. In 2000, he was recognized as the best young chef of the year by the Espresso guide. That same year, he was awarded a Michelin star, which he has maintained ever since. In 2024, he received the Passion Dessert prize from Michelin. A key figure in promoting Roero’s culinary culture, he has dedicated his career to enhancing the region’s gastronomic identity. He is married to Annalisa, with whom he has three children: Francesco, Vittoria, and Cecilia.
The opening of the Regional Wine Cellar of Roero and the adjoining restaurant All’Enoteca in 1995 marked a significant milestone in his career. At just 24 years old, he embraced the challenge with enthusiasm and ambition, eager to contribute to the development of Roero’s wine and dining culture, which had long been overshadowed by the neighboring Langa hills. All’Enoteca has since become a benchmark for the cuisine of both Langa and Roero, standing out for its distinct personality and modern refinement—an elegance that is neither contrived nor excessive but rather natural and understated.
Light plays a central role in defining the restaurant’s ambiance, flooding the dining room and charming terrace before stopping at the private inner room, which is adorned with works by his friend Valerio Berruti. The cuisine reflects the history and traditions of the region, paying homage to the home-cooking wisdom of generations of anonymous peasant housewives. However, it does not dwell in nostalgia, nor is it confined by tradition. Instead, the menu evolves with the seasons of Langa and Roero while embracing influences from travels, research, and creativity. Every ingredient, whether humble or noble, is treated with the utmost respect, driven by an insatiable pursuit of authenticity. The connection between fruit and wine remains inseparable—a tribute to a land blessed with excellence throughout the year.

In the original medieval layout of the 1200s, the site corresponded to the toll tower and was under the ownership of the local feudal lords. Today, it reflects the geometric lines of the 19th century, shaped by its last major architectural transformation when it was repurposed as the Regina Margherita kindergarten. A respectful restoration has preserved its brightness and understated elegance, further enhanced by a terrace and a charming garden.
